The establishments that put up no carry signs in all likelihood do it on advice of corporate counsel. Legal counsel is always trying to think ahead to provide a safe (or at least safer) legal position for their client or employer. Meaning, if there was a shooting inside a certain establishment and it involved a concealed weapon (carried concealed legally or otherwise) and injury occurred, the legal position would be stronger if there was a warning sign up posting the area against weapons carry. This way the injured may make some kind of claim, but they can't make the claim, "You didn't tell people not to carry guns here". I know that may sound silly to some people, but that's how the country works these days.

The practical side of it is, people who have legal permits to carry weapons concealed are probably not likely to cause trouble with their weapons. One the other hand, people who want to carry weapons concealed for illegal activities are going to carry them into the store regardless of any signs posted. As a practical matter, the sign is probably ineffectual in most situations.

If you have a permit to carry a concealed weapon, it is wise to do so in a manner that doesn't allow others to know you are so doing. For one thing, it gives you some edge with the bad guys. For another, it cuts down on the "alarmism" that can occur when someone sees a carelessly concealed weapon. There are a few goofballs who carry with some intention of the supposedly concealed weapon being seen, but they fortunately are small in number. There are dilletantes and posers in every aspect of life, so we see a few of them in the CWP arena as anywhere else.

I myself have had a concealed weapon permit for 21 years but I rarely carry in everyday life. I don't want to carry a pistol around unnecessarily any more than I want to carry extra keys in my pocket. I live in a reasonably secure area and only when I feel specific need to do so do I carry a weapon. When I am around home, which is a lot of the time now that I am retired, a weapon is never far away anyhow.

Now, having said this last part, I will allow that when I am travelling out on the road on long trips, I almost always carry a concealed weapon. I do a bit more long distance travel in my car now, also because I am retired. Mostly, I keep a revolver concealed down between the two front seats of my Crown Victoria, under an arm rest. If I come onto an area with compromised safety, I'll take it out of the car with me, concealed. Since my long distance travel is often in other states, I know I am breaking the law most of the time. CWP's are normally only valid in the states of issuance unless there is a reciprocity law and this is far from universal. Ironically, the states where concealed carry is most likely to be necessary are the ones that are the most restrictive in their policies having to do with CWP's. I haven't had many experiences with violent encounters, but I have had just enough that I don't want to get shanked or shivved by some MS-13 gang member who sees me, an old white guy, as an easy mark.
